Chicken, Potatoes + Spinach, Oh My!

Cooking with ingredients you already have in-house can be difficult sometimes. Over the past week, I was inspired to make a fancy meal with everything in the house. I took on this challenge with a friend named Jessica. We were scouring the cupboard and fridge for ideas when it hit us: we were going to make a chicken dish with potatoes and spinach topped with a Moscato reduced tarragon mustard sauce.

 

By far this was the most delicious meal I’ve ever made. With the new year in session, I’m trying to cook more and experiment with food. This one tasted so good that it inspired me to share it with you. So here is the recipe:

 


Cook time: 25 min
Serves: 2-3 people


Ingredients:
For Meal: 

(2) 4-6oz Chicken Breasts

3 Red Norland Potatoes

8 oz Baby Spinach

1/2 a Red Onion (chopped)

2-3 Pieces of Turkey Bacon (can substitute for normal bacon)

2 Cloves of Garlic

4 tablespoons Canola Oil

Salt and Pepper


For Sauce:

1/4 cup White Wine (We used Moscato)

1/2 cup Heavy Cream

2 tablespoons Honey Mustard

1 teaspoon Dried Tarragon

Corn Starch and Water


Let’s Get Cooking:

  1. Cut potatoes into wedges, chop turkey bacon and chop the onion 
  2. Heat up the grill for the chicken (or whichever cooking methods you have access to)
  3. Grab a cast iron pan (it’s the best for crisping potatoes, but a normal pan can substitute) and heat up the cooking oil then place cut potatoes into the pan. Stir intermittently for roughly 20 minutes, or until desired crispiness is obtained.
  4. Put the chicken on the grill and cook for 5-6 minutes on each side
  5. Saute onion and bacon in a pan until the onion turns translucent, then add spinach and continue to saute.
  6. In a small pan, cook the wine until reduced (roughly 1-2 min). Then pour the mustard, tarragon, and cream in the pan and cook until brought to a simmer. Once at a simmer, stir constantly for 2 minutes.
  7. Optional: For the sauce, add some cornstarch and water and mix into the sauce until desired thickness is obtained.
  8. Serve! Eat! Repeat!

 

I know that I will be reusing this sauce for so many other recipes. It added so much savory flavor that I want to add to more dishes.
